One exception is the gal - it uses the display name only and unfortunately, you can't change that.
If its picking it up from the contact, you can edit the contact to change it - clear the entry from autocomplete too. I have a handful of contacts that are JUST companies.

To make this easier, you can create personal address books using the names in your Outlook contact folders. To do this, create a folder under Contacts , and then make that folder an address book. Select the People tab at the bottom of your Outlook screen. To make sure your folder is available as an address book, right-click the new folder, and then click Properties.
